Healthy Recipe
These pancakes prove that healthy can also mean genuinely delicious. There’s no refined flour and no added sugar — just oats, banana and eggs blitzed into a smooth batter that cooks up light and fluffy.
Ingredients
- 1 cup rolled oats (use certified GF if needed)
- 2 ripe bananas
- 2 eggs
- ½ cup milk of choice
- 1 tsp baking powder
- 1 tsp vanilla + pinch of cinnamon
Method
- Add everything to a blender and blitz until smooth. Let the batter rest 5 minutes to thicken.
- Heat a lightly oiled non-stick pan over medium. Pour small rounds of batter.
- Cook 2 minutes until bubbles form, flip, and cook 1–2 minutes more until golden.
Top with berries, a dollop of yoghurt and a drizzle of honey. Batter keeps in the fridge for 2 days.
Why it works
Oats add slow-release energy and fibre, banana brings natural sweetness and potassium, and the eggs give these pancakes a protein boost to keep you satisfied all morning.
