Healthy Recipe
Stir-fries are the ultimate quick, healthy dinner — endlessly flexible and ready before delivery would even arrive. This one keeps the vegetables crisp and the sauce light but full of flavour.
Ingredients
Stir-fry
- 1 tbsp sesame or olive oil
- 1 red pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 1 cup sugar snap peas
- 2 spring onions, sliced
3-ingredient sauce
- 3 tbsp low-sodium soy sauce
- 1 tbsp honey or maple syrup
- 1 tsp grated ginger (+ splash of water)
Method
- Heat oil in a wok over high heat. Add the firmer veg (carrot, broccoli) first and stir-fry 3 minutes.
- Add pepper and sugar snaps; stir-fry 3 more minutes until crisp-tender.
- Pour in the sauce, toss for 1 minute to coat, then scatter with spring onions.
Add tofu, edamame or leftover chicken for extra protein, and serve over noodles or rice.
Why you’ll love it
